Fashioned Peach Preserves
2 qt. Sliced, peeled, ripe peaches
6 cups sugar
Makes 7 half pints or 3-4 pints
Combine fruit and sugar. Let stand 12-18 hours in cool place. Bring slowly to boil, stirring frequently. Boil gently until fruit becomes clear and syrup thickens, about 40 minutes. Skim foam off top if necessary. Fill hot jars leaving ¼ inch headspace. Wipe jar rims, adjust lids and water bath process.
