Peach Jam

2 pounds peaches

2 Tbsp lemon juice

1 pkg powdered pectin

5 ½ cups sugar

Peel and finely chop peaches to measure 4 cups. Combine peaches, lemon juice and pectin in an 8-10 quart pot.

Bring mixture to full rolling boil. Stir in sugar. Bring to full rolling boil again. Boil hard, uncovered, 1 minute stirring constantly. Remove from heat. Skim off any foam with metal spoon. Pour into hot jars leaving ¼ inch headspace. Wipe jar rims, adjust lids and water bath process.

Jar Size 0-1000 ft.  1001-6000 ft.   Over 6000 ft.
