Peach
Pie Filling
6 qts. peaches, sliced
7 cups sugar
2 cups + 3 Tbsp Clear Jel
1 tsp cinnamon
1 tsp almond extract
5 ¼ cups cold water
1 ¾ cup bottled lemon juice
Peel peaches and cut into 1/2
“ slices. Place 6 cups at a time in 1 gallon of boiling water. Boil each batch
1 min. after water returns to a boil. Drain, but keep heated fruit in a covered
bowl or pot. Combine sugar and Clear Jel in large kettle. Stir. Add water and
seasoning and stir until dissolved. On medium heat, cook until mixture thickens.
Add lemon juice and boil 1 minute more, stirring constantly. Fold in warm peach
slices and continue to heat for 3 minutes. Quickly fill clean jars leaving 1”
headspace. Wipe jar rims, adjust lids and water bath process.
