Peaches
5 cups sugar
2 cups water
1 cup vinegar
12 inches stick cinnamon
2 tsp. whole cloves
2 ½ pounds peaches
In 4 to 6 quart heavy pot, combine sugar, water, vinegar, cinnamon and cloves. Heat this syrup to boiling and keep hot but not continue to boil. Wash, peel(per canning), halve and pit peaches. Add peach halves to syrup as soon as cut.
Heat peaches in hot syrup 5 minutes. Pack fruit and syrup into hot jars, leaving ½ inch headspace. Wipe jar rims, adjust lids and water bath process. Makes 3 pints.
