Peach Muffins

Ingredients:

2 cups cake flour

3/4 tsp salt

1 cup sugar

2 tsp baking powder

2 eggs

2-4 tbs melted butter

3/4 cup milk

1/2 cup Palisade peaches

Sift flour with salt, sugar and baking powder.

Beat eggs in a separate bowl. Add and combine to melted buter, milk and Palisade peaches.

Combine liquid and dry ingredients. Stir. fill well greased muffin tins about 2/3 full. Bake in preheated oven 20-25 minutes at 400 degrees F. Makes approximately 2 dozen 2 inch muffins.
